Heat 1 to 2 tablespoons olive oil in heavy skillet. Sauté chicken with 1/2 cup onion and garlic until chicken is opaque and onion is tender. Season with salt and pepper to taste. Stir in tomatoes and herbs. Keep warm over low heat. In another large, heavy skillet, heat I to 2 tablespoons olive oil; sauté rice until lightly browned. Add wine and stir until absorbed.

Stir in hot chicken broth one cup at a time, stirring until most of the broth is absorbed before adding next cup. Continue adding broth until all 6 cups (or more) have been absorbed and rice is tender, but not mushy. Season with salt and pepper to taste. Stir in Parmesan cheese.
